It must seem as though I eat a ton of salad. Don’t worry, I eat lots of other things. Even things that aren’t the best for me. It’s hurting more and more to haul my body up a climbing wall, which is a bad sign. The more it hurts, the more I have weighing me down. Not that I have a lot to be worried about, but it’s demoralizing from an “I-want-to-be-a-better-climber” standpoint.
So when I really enjoy a salad and don’t feel like I’m missing out on life (aka indulgent, cooked, rich foods), I celebrate the recipe. And a salad sings when you have a good vinaigrette. This one I like a lot. It’s simple and uses my fresh garden herbs on top of fresh garden vegetables. If you don’t like cilantro, use parsley. Some people hate cilantro. Sometimes it’s not really even their fault. Apparently some people’s tongues react differently to cilantro. It’s like kids who don’t like bitter things. Kids sometimes grow out of it, but they’re not necessarily sticking their tongue out at it for nothing. Sometimes they are, yes.
Here’s the dressing recipe. It comes from Ferme Tuurnesol. I’m happy to redirect you to that farm’s website. They’re lovely people, great farmers, and occasionally have a useful recipe on their site. Toss the vinaigrette with whatever veggies you want. Greens, cucumber, zucchini blossoms, peas, peppers, tomatoes, herbs. Anything.
