Thanks to all the participants in my sustainable sushi class last week. Between the perfectly washed rice, expertly wrapped maki, carefully shaped lobster nigiri, and beautifully molded onigiri, I think we did more than alright. Would it make a Japanese grandmother proud? Hmm…well, it wasn’t maybe up to Japanese grandmother standards, but at least now everyone knows what those are.

I’ve started working with local food event bookers, Bookalokal, so payment is done securely online in advance. It’s like the airbnb of food but it’s for locals and travellers alike.

This will be a vegetarian sushi cooking class. We’ll start with making perfect sushi rice and homemade pickled ginger, drink quality sake I brought back from Japan, and learn to roll maki, inside-out rolls, handrolls, and nigiri. On the MenuTo start: Organic miso soup
Main Dish: avocado-cucumber maki rolls, mango inside-out rolls, sweet potato and umeboshi pickled plum handrolls, and pickled burdock root nigiri with gluten-free soy sauce and homemade pickled ginger
Dessert: Sweet oranges
