Montreal doesn’t have a lot of gluten-free baking, which is why Les Gateauries is a godsend. There’s currently no store front for this two-person operation that provides cupcakes, birthday cakes, wedding cakes (how many gluten-free kids, brides, and grooms get to actually eat their celebratory cake??? On my last birthday I asked for rice pudding!), and other sweet treats for those whose bodies don’t tolerate wheat or gluten. They also cater to other food intolerances and serious food allegies and conditions including Celiac Disease.
As part of Veggietopia, a month-long veggie challenge, Chef Kiki of Les Gateauries led a culinary workshop on gluten-free vegan cooking and allowed me to interview her about her experience with gluten-free baking and serving a community of people who don’t have many options when it comes to satisfying their sweet tooth.
The culinary workshop menu included rice paper Vietnamese rolls with mango, cucumber, and carrots with a lemongrass dipping sauce or spicy hoisin, butter beans with sweet potatoes stew on quinoa, wilted kale salad with pineapple, and the evening ended with Chef Kiki offering her homemade coconut milk dark chocolate ganache cupcakes. Whether you’re gluten-free or not, Les Gateauries is just as good, if not better, than traditional baking, and I say that as a resident of a wonderful city in which to buy baked goods.
