I’ve been working my way through cookbook author Becky Selengut’s updated “Good Fish,” which has some extra recipes including this one for lingcod with citrus and arbequina olives. I use Pacific cod for this recipe instead of lingcod, but it’s also sustainable and is actually available here in Montreal. I also used different olives, but don’t stray too far from the Spanish ideal of sweet, small green ones (I wouldn’t use giant kalamatas, for example).
Why do I love this recipe?
- I love any recipe that calls for chipotle powder, which gives a tiny smokiness to the dish, pairing perfectly with the orange supremes and sweet red peppers.
- I get to roast fingerling potatoes and then soak them, beautifully crusty, into the tomato-based smoky sauce.
- I have a whole cupboard of home jarred roasted red peppers that don’t taste overly brine-y.
- I love the textures and bright hits of flavour, from the chewy potatoes to the juicy orange pieces to the salty olives, warm and filling tomato sauce and tender, mild cod.
- It comes out seeming much fancier than it is. You could serve it at a dinner party or make it for yourself on a weekday evening.
I won’t give the recipe, but the method is genius. The fish gets a good sear before soaking in the sauce to finish it without overcooking. The potatoes are seared and then baked, which reduces how much oil you need to fry them while still giving them that delicious browned crust of fried potatoes. Then you just add all the sauce ingredients together. Oh, and there’s vermouth involved, which feels nice and Spanish (and makes for a low-alcohol aperitif while cooking).
