It’s currently 7:30 a.m. and it’s already 19˚C in Montreal. It’s expected to get to 28 with a humidex over 30, making it what’s likely to be the last HOT day of the year. It’s making me think of beaches and sun and cocktails all on its own, but especially because it’s the time of the year when I’m usually in Barbados writing for Menu International magazine.
I was reminded of this yesterday when my own cocktail recipe popped up in my inbox! The resort where I’m sometimes hosted has a mailing list that I’m happy to subscribe to for the occasional oceanside view of Barbados’ white beaches. This time, however, they were featuring a profile of their longtime bartender and his royal-inspired cocktail.
I remember sipping this drink at the bar at The Sandpiper Resort while my hair went all frizzy from the humidity and gentle breeze. There was music in the background that made me wish I was there with someone else, rather than drinking this mango-rum iced creation on my own. Still, I’d have to be a special kind of idiot to complain.
I’m not always a special kind of idiot, and neither will you be if you make this drink at home. Or splurge on the work-from-away deal that Barbados is selling to people who want to come stay for a while during Covid.
But wherever you are, drink a little Mount Gay rum with some mango and enjoy the sunshine wherever you are.
