You don’t need an excuse for cookies, but I had one. These white chocolate and almond shortbread cookies were the perfect apology cookie for my downstairs neighbours, whose lives I disturb regularly by jumping on my floor during climbing workouts.
Really, it’s Block Shop’s fault. Maybe they owe me some cookies for making such good cardio cross-training video workouts during quarantine. What am I supposed to do when they go into jumping jack squats? Not jump? What’s that? That’s a Jack squat, which is, as its name implies, worth nada.
Anyway, apology cookies. I didn’t want to buy flour, and I had cornstarch and almond powder, so I decided on a hybrid of a shortbread cookie and amaretti, then I threw in some white chocolate chips I had lying around.
The result: Rave reviews. Forgiveness? Maybe not, but at least now they understand why I do so much jumping. I need to work off these cookies for when climbing gyms open again post-lockdown. I can just imagine the joint pain now.
